Banana Muffins

Easy banana muffin recipe with no egg. Great for when you have a lot of overripe bananas. Make them healthier by using whole wheat pastry flour.

TOTAL TIME: 35 min
YIELD: 12 muffins

INGREDIENTS:

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 bananas
  • 3/4 cup sugar
  • 1/3 cup oil (or melted butter).

DIRECTIONS:

  1. Preheat oven to 350 degrees.
  2. Mix flour, baking powder, baking soda, and salt together in a bowl.
  3. Roughly cut bananas and place in blender with oil. Blend until smooth.
  4. Blend sugar into banana mixture.
  5. Pour banana mixture onto flour mixture and beat until smooth.
  6. Scoop batter into muffin tin. Bake 25 to 30 minutes. Muffins are done when an inserted toothpick comes out clean.
