Banana Muffins
Easy banana muffin recipe with no egg. Great for when you have a lot of overripe bananas. Make them healthier by using whole wheat pastry flour.

INGREDIENTS:
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 4 bananas
- 3/4 cup sugar
- 1/3 cup oil (or melted butter).
DIRECTIONS:
- Preheat oven to 350 degrees.
- Mix flour, baking powder, baking soda, and salt together in a bowl.
- Roughly cut bananas and place in blender with oil. Blend until smooth.
- Blend sugar into banana mixture.
- Pour banana mixture onto flour mixture and beat until smooth.
- Scoop batter into muffin tin. Bake 25 to 30 minutes. Muffins are done when an inserted toothpick comes out clean.
